The Publican Beer Focused Restaurant in Chicago, Illinois

The Publican is an innovative beer-focused restaurant located in Chicago, Illinois.

Executive Chef Paul Kahan and Chef de Cuisine Brian Huston created a diverse menu moved by simple farmhouse fare in a space reminiscent of a European beer hall. The Publican features simple lines and strong design elements.

Strong architectural lines control the space, which is large, airy and soaked in earthy colors. Inside, the roomy interior is subjugated by a large walnut communal table designed to recall 16th Century European banquets. Set up in racetrack fashion, the banquet table seats upwards of 100 people, side by side.

The restaurant features pork and fish and seafood preparations. The menu is best described by Kahan and Huston as “pristine product, simply prepared.” The Publican offers the simple gastronomy, each dish stripped of decoration and containing only crucial ingredients. The menu is presented in sections: Fish, Meat and Vegetables, each spread out from lightest to heaviest fare.
